- 400g grilled chicken breast, sliced
- 200g avocado slices
- PEPPADEW® Sweet Piquanté Peppers Mild or Hot Whole
- 100g charred corn
- 4 Tbsp fresh coriander
- 80g edamame bean
- Juice of 1 lime
- 160g Bulgur wheat, cooked
- 160g yellow split lentils, cooked
- 40g red onion slices
- Salt and pepper
Method
- In a bowl, combine the bulgur wheat and lentils together.
- Arrange the rest of the ingredients over the Bulgur wheat and lentils.
- Squeeze the lime juice lightly over and season.
- Serve immediately.
