Ingredients

  • 4 rashes streaky bacon
  • 100 g cooked and mashed potatoes
  • 15 ml (1 Tbsp) mayonnaise
  • 100 g cheddar cheese, grated
  • 50 g mozzarella cheese, grated
    15 ml (1 tsp) fresh parsley or chives, finely chopped
    Salt and milled black pepper
    10 – 12 PEPPADEW® Jalapeño Cones

Method

  • Grill the bacon until crispy and chop into small pieces.
  • Place the mashed potatoes into a mixing bowl and add the mayonnaise, cheddar and mozzarella cheeses, parsley and bacon bits.
  • Mix well to combine and season with salt and pepper.
  • Stuff the PEPPADEW® Jalapeño Cones with the mashed potato filling.
  • Arrange the PEPPADEW® Jalapeño Cones in a single layer on a baking sheet and bake for 7-10 minutes at 180°C.
  • Serve warm with a Ranch-style or sour cream dressing.
