Sweet Potato Rosti Recipe

Ingredients
3 cups sweet potatoes, grated
1 cup onion grated
1 egg
½ cup PEPPADEW® Mild Piquanté Peppers Whole
1 teaspoon salt
1 teaspoon pepper
2 tablespoons coconut oil

Method
Add all the ingredients together (except the coconut oil ) in a bowl and mix through
In a pan heat the coconut oil
Shape out the rosti using your hand and fry the rosti on both sides for 5 minutes or until golden brown
Serve with a crunchy salad and roast of choice

Replace the sweet potato with baby marrow
