EASY GREEN EGGS & HAM
- Grease a 12-hole muffin tin, then push a slice of ham into each opening as you would a muffin paper.
- Heat the olive oil in a pan and fry the onion until soft. Add the spinach and garlic, if using, and cook until quite dry. Remove from the heat and add PEPPADEW® Hot
- Jalapeño Slices. Drain the mixture, if necessary, and then chop finely.
- Whisk eggs in a large bowl, season and stir in the green mixture. Pour into the moulds over the ham and bake at 180°C for 8 – 10 minutes, until firm but still slightly wobbly.
You can include herbs, chopped tomato, cooked corn kernels and various cheeses.
