Ingredients

  • 12 slices ham (try Parma Ham if you’re entertaining)
  • 1 Tbsp olive oil
  • 1 small onion, finely diced
  • 1 bag spinach leaves, washed and shredded
  • 1 clove garlic (optional)
  • PEPPADEW® Hot Jalapeño Slices to taste
  • 12 eggs

Method

  • Grease a 12-hole muffin tin, then push a slice of ham into each opening as you would a muffin paper.
  • Heat the olive oil in a pan and fry the onion until soft. Add the spinach and garlic, if using, and cook until quite dry. Remove from the heat and add PEPPADEW® Hot
  • Jalapeño Slices. Drain the mixture, if necessary, and then chop finely.
  • Whisk eggs in a large bowl, season and stir in the green mixture. Pour into the moulds over the ham and bake at 180°C for 8 – 10 minutes, until firm but still slightly wobbly.

Serving Suggestions

You can include herbs, chopped tomato, cooked corn kernels and various cheeses.
