Smoked Salmon Couscous Recipe

Ingredients
1 cup cous cous
1 cup hot water
1 tbsp vegetable stock
1 tsp garlic salt
500g smoked salmon
½ cup garden peas, cooked
1 cup cucumber sliced
½ cup PEPPADEW® Mild Piquanté Peppers Diced
4 tbsp Pomegranate kernels
80 g carrot ribbon
Lemon slices for garnish
Olive oil and balsamic for dressing

Method
In a bowl add the cous cous, stock, garlic salt and hot water, mix well
Cover the bowl and leave for 5 minutes
Loosen the cous cous with a fork
Add all the remaining ingredients evenly in a bowl and serve
