2 ripe tomatoes, finely diced
1 mielie, corn sliced from the cob
1 small (or 1/2 medium) red onion, finely chopped
A handful of fresh coriander, roughly chopped
1/2 cup Peppadew® Jalapeño & Ginger Relish
Salt & freshly ground pepper to taste
150 (5.3 oz.) – 300g (10.6 oz.) tortilla chips, to serve
250ml (8.5 fl oz.) sour cream, to serve
In a medium size bowl, mix the diced tomatoes, sliced corn, chopped red onion, chopped coriander and Peppadew® Jalapeño & Ginger Relish. Season with salt & pepper.
Serve with tortilla chips and sour cream.
