2 tablespoons vegetable oil, divided into 2
750g beef fillet, thinly sliced
4 cloves garlic, crushed
1 small red onion, cut into wedges
8 Hot Peppadew™ Sweet Piquanté Peppadew quartered
1 dessertspoon Piquanté Pepper Brine (juice)
100ml oyster sauce
1 1/2 tablespoons chopped mint leaves
5 to 10 whole mint leaves

How you do it:

How you do it

  1. Heat wok over high heat. Add 1/2 of the oil and swirl to coat. Add meat and garlic in batches and stir-fry for 2 minutes, removing each batch after frying.

  2. Add remaining oil and fry onion until translucent. Return meat to wok and add the Sweet Piquanté Peppers and brine, oyster sauce and chopped mint leaves. Cook for a further 1 to 2 minutes.

  3. Remove from heat and stir in the whole mint leaves. Serve with rice.
