Borlotti Brazil Burgers with Peppadew® Mild Sweet Piquanté Peppers

•    400g can borlotti beans, rinsed and drained
•    1 tbsp olive oil, plus extra for grilling
•    1 small red onion, finely chopped
•    1 carrot, grated
•    1 celery stick, finely chopped
•    6 Peppadew® Mild Sweet Piquanté Peppers, drained and finely chopped, plus extra to serve
•    50g Brazil nuts, roughly chopped
•    100g fresh wholemeal breadcrumbs
•    2 tbsp chopped fresh parsley
•    Salt and pepper
•    Burger buns, rocket, and créme fraîche to serve

  1. Tip the beans into a bowl and mash them roughly.

  2. Heat the oil in a pan and fry the onion, carrot and celery until softened.

  3. Add to the beans with the chopped piquanté peppers, nuts, breadcrumbs and parsley. Season with salt and pepper and mix well.

  4. Shape the mixture into 6 patties and chill on a plate lined with cling film until firm.

  5. Heat a skillet on the barbecue, brush it with oil and add the burgers. Cook over medium heat for 12-15 minutes, turning once.  Serve on burger buns with rocket and créme fraîche, and garnish with more Peppadew® Mild Sweet Piquanté Peppers.
