3 tbsp Peppadew® Sundried Raisin Tomato oil
2 tbsp lemon juice
1 tsp sugar
2 tsp grainy mustard
1 clove garlic
1 tsp oregano, chopped
1 tsp chopped parsley
Salt and black pepper to taste
SALAD INGREDIENTS
20 Peppadew® Sundried Raisin Tomatoes
200g goat’s feta rounds
½ cucumber, sliced into ribbons using a vegetable peeler
1 small red onion, sliced
1 cup baby leaves
100g olives
100g cashew nuts toasted and crushed
1 cup wild rocket
