Chicken, Pineapple and Peppadew® Kebabs

What you'll need
For the marinade:
- 250ml pineapple juice
- Juice of 3 limes
- 45ml olive oil
- 45g brown sugar
- 1 tbsp Mild Peppadew® Piquanté Pepper brine (juice)
- Salt and freshly ground black pepper to taste
- 3-4 spring onions, roughly chopped
For the kebabs:
- 6 chicken breast fillets, cut into 2.5cm cubes
- 1 pineapple, peeled and cored, cut into bite-size chunks
- 1 x jar Mild Peppadew® Sweet Piquanté Peppers, drained
- Lime wedges for serving
How you do it
- Mix the pineapple juice, lime juice, olive oil, Peppadew® Piquanté Pepper brine and brown sugar together in a bowl. Add the spring onions and mix well. Add the chicken to the mixture, toss well to coat. Marinate for 2 hours, turning twice.
- Thread chicken, pineapple and Peppadew® Sweet Piquanté Peppers onto skewers.
- Grill under a preheated grill or over moderate coals for 12-15 minutes or until chicken is cooked and pineapple lightly Remove from heat and serve with wedges of lime.
