2 chicken breasts cut into strips
2 tbsp cilantro seasoning
2 tbsp cooking oil
1 cucumber (peeled, seeds removed and cut into cubes)
Half a pineapple (peeled and cut into cubes)
80g Peppadew® Sweet Piquanté peppers (cut into quarters)
1 packet of mixed baby lettuce
3 tbsp olive oil
2 tbsp Peppadew® Sweet Piquanté pepper brine
1 tbsp lime juice
3 tbsp Peppadew® Sweet Piquanté relish
Season the chicken strips with the cilantro in a very hot pan, sauté the chicken strips in oil until cooked (7-10 min.)Cool and reserve.
In a large bowl mix the cucumber, pineapple Peppadew® Sweet Piquanté peppers and the chicken.
In a separated bowl whisk together the ingredients for the salad dressing.
On a serving platter, spread the baby lettuce and then place the cucumber pineapple peppers and chicken on top of the lettuce and finish off with drizzling the dressing on top and on the lettuce.
